Why is one server faster than another?



Server speed is variable based on many factors:

Your location
The number of people on the server
The location of the website you're visiting
The protocol you are using (PPTP > OpenVPN UDP > OpenVPN TCP)

Typically, you would want to connect to the closest server to you. Please note that PPTP is typically faster than OpenVPN.
